Rocket Broth’s Gobbler Gravy
Come the gravy-making rush, can we convince you to toss the flour and rely on Rocket Broth instead? Your turkey deserves it—and for that matter, so do you! Want justice? Here’s a recipe that will bring it to your plate, if not beyond. Call it “gravy” or “sauce” as you please, but on our word, it beats the pants off your granny’s.
*This recipe makes plenty for 10 to 12 people with drippings from a 12 to 17 lb. bird. Use the larger quantity of liquid suggested for larger birds.
1 – 24 oz. package Rocket Chicken Bone Broth, thawed
1 turkey liver or 3 chicken livers, finely chopped
2 shallots, finely chopped
Drippings and brown bits leftover from roasting your big bird
1 ½ to 2 cups heavy cream (even better if not ultra-pasteurized)
¼ to ½ cup Fino Dry Sherry
Salt and black pepper
